I'm sorry, but I haven't heard of either of the Kauai wedding companies. I would suggest asking the Grantham Rentals people for suggestions (they are quite reputable).

Since you are considering the Hyatt for dinner, you may want to look into their wedding location too - they have a wedding gazebo with ocean views. Kiahuna plantation also has many good wedding spots.
