Aloha everyone. What a week. I'm sure many of you join me in hoping our armed services members in China come home soon. Also, a teacher's strike started in Hawaii today, with no indication of how long it will last - watch out for all the kids!

01. --- Island Recipes ---

Anyone who has been to the islands before will probably agree with me that local food is not only very good, but also very diverse. "Local food" is not just Hawaiian food, but also a mixture of Japanese, Chinese, Korean, Philipino, and American. The Hawaiian food I eat on a regular basis is kalua pork, chicken long rice, and loco mocos. These are three local favorites guaranteed to please most palates, so if you get a chance, try them. Two very authentic dishes that I don't really like are poi and lau laus - but hey, try these too! My taste buds are weird.

You can cook your own at home to get ready for the trip to the islands, or just reminisce - here's some great sites to help you. As for the ingredients not-available-in-safeway, try a health food store or a chinese food store.

Mixed Plate **** The chicken long rice recipe here under Hawaiian is ONO, and easy to make.

  • 2 1/2 lb chicken thighs
  • 3 quarts water
  • 1 tablespoon salt
  • 1 1/2 tablespoons minced ginger root
  • 1 large onion, finely chopped
  • 5 chicken bouillon cubes
  • 8 oz long rice
  • 3 green onions, chopped

    Put chicken into a five quart saucepan. Add two quarts of the water, the salt and ginger. Bring to a boil, skim, lower heat, and simmer for forty minutes. Remove from heat and drain, saving broth. Remove meat from chicken, discarding bones. Shred meat and set aside. Put broth, onion, bouillon cubes and the remaining one quart water into saucepan. Bring to a boil. Add long rice, then lower heat and cook, covered for 5 minutes. Turn off heat and let stand about 30 minutes. With kitchen shears, cut long rice into approximately 3- or 4- inch lengths. Stir in chicken and heat briefly, if desired, before serving. Sprinkle with green onions. Makes 6 to 8 servings.

    note dec 2005, well the pictures are gone from that site. too bad. I will try desperately this winter to find some replacements - a google search shows nothing. I stumbled upon these amusing pictures recently (I'm not sure why all the pictures look like they were taken for surveillance puposes) and thought I had to share this. Taking a pickup truck up to Mauna Kea and gathering snow for the kids (big kids in this case) is a frequent winter pasttime here in East Hawaii. Normally, at least one snowperson ends up on the front page of the paper before it melts in the 80 degree heat.
